Food Handler Training - Requirements and Management

Food Handler training requirements

Food businesses need to make sure that anyone who handles food has completed a food safety training course, or has appropriate skills and knowledge, before they start handling high-risk foods.

  • health and hygiene
  • dealing with high risk foods  
  • food contamination 
  • cleaning and sanitising of food premises and equipment 
  • safely sourcing and receiving food
  • managing customer complaints
  • what to do when something goes wrong
  • managing food recalls
  • personal hygiene

Keeping training records 

Your auditor will need to see records of how and when staff completed food handler training. The following information should be included:

  • who was trained
  • when they were trained
  • what they were trained on
  • sign off from the trainer and trainee
